David Wondrich helped reinvigorate the practice of creating new versions of classic cocktails with his book Imbibe! One of his discoveries was Garrick Club Punch, named for the London establishment in which New York bartender Stephen Price made a refreshing gin-based cocktail for Theodore Hook, an English humorist and bon vivant, one summer day.
Wondrich starts by muddling the spiral-cut peel of a lemon in 10 ounces of gin in a two-quart glass pitcher; for this version, he uses Hayman's Old Tom. He lets the mixture sit for about 15 minutes so that the gin can absorb some of the lemon oils, then mixes two ounces of sugar with two of lemon juice and adds it to the pitcher along with an ounce and a half of Luxardo maraschino liqueur, which adds a distinctive pizzazz to the drink. He finishes the punch by adding 10 ounces of chilled soda water and three cups of ice, stirring and pouring into tall glasses.
